We have just received the tasting comments of Andreas Larrson, Best Sommelier of the World 2007 who has conducted for our three most prestigious wines what he calls “evolutive tasting”. His idea is to taste the same wine at four different moments to see how it changes with time. We sent him our 3 most prestigious Burgundy wines, namely :
CHABLIS GRAND CRU
MAISON ALBERT BICHOT ‐ MOUTONNE 2006

Minerals and ripe fruit on the nose, quite expressive, the palate has a good structure, balanced acidity, not too high, rather ripe with a good length.
First tasting: 29/08/2008
Fine purity and mineral character on the nose, more floral this time, the palate has a fine balance, the slight bitter/tannic notes are gone, fresh, zesty and long aftertaste.
Second tasting: 16/02/2009
Much more development on the nose, mineral and firm, the palate is still on the rich/ripe side, well balanced with a long mineral finish, nicely drinkable, a good example in a rather warm style.
Third tasting: 20/08/2009
Still nice purity and a classic mineral note, however the fruit is a bit more opulent towards the tropical, nicely balanced and very long with a fine dose of complexity, excellent drinkability, yet with potential for 10 years.
