Winter Operation !

It’s winter, the “died season”. Nevertheless, work  made in the vineyard is still important! No rest for our technical teams! From the fall of sheets (end October-beginning November), it is necessary to begin the precutting! This mechanical operation allows to facilitate the removal of the vine shoots after their cutting. It is also necessary to remove the dead stocks with a “tarrière” *1 .

Often, after the ” Vente des Vins des Hospices de Beaune” week end , when the sap*2 has came down, begin the prunning, which will go to last apporximately two months. The prunning aims to limit the disproportionate growth of the vineyard and regulate the production of grapes in quality and in quantity. It is made during the vegetative rest. But it’s not everything! It’s also necessary to “sarmenter”, which means to collect the cut branches (sarments) to burn or to crush them. Then, earthing-up will be done   (return the earth in the shape of «mound» at the base of  vine) or “griffées”.
